Dining Menu

Our full menu is available during lunch and dinner in both of our dining rooms. We also serve a buffet-style breakfast starting at 7am every day, as well as a Sunday brunch from 9am onward.

Any of our entrees can be served with a cup of soup or a house salad for an additional $2.50.

Starters:

Smothered Chile Cheese Fries – Ample cheddar cheese and your choice of chile sauce. $4.95

Stuffed Potato Skins – Four baked potato skins stuffed with bacon, chopped green chile and cheddar cheese, served with a side of ranch dressing. $5.95

Nachos – Fresh corn chips smothered in your choice of chile sauce, pinto beans and melted cheddar cheese and served with sour cream and guacamole. $6.95, add seasoned ground beef or chicken for $2.00

Guacamole – Fresh guacamole makes the perfect accompaniment for our tortilla chips. $3.95

Lighter Fare:

Soup of the Day – Your choice of our chef’s daily soups. $3.50 a cup or 5.95 a bowl.

House Salad – Mixed greens with red cabbage, carrots, tomato, and cucumber served with your choice of ranch, thousand island, blue cheese, caesar, house italian or homemade honey balsamic vinaigrette dressing. $3.95, make it a meal with grilled salmon, steak or chicken for $4.00

Cobb Salad – Mixed greens with ham, turkey, bacon, cheddar cheese and hard-boiled egg wedges. $6.50

Mediterranean Lasagna – Vegetarian spinach lasagna with feta cheese, baked in a light tomato salsa and served with sautéed mixed vegetables. $9.95

Salmon Tacos – Two grilled salmon tacos in soft flour tortillas with a tangy salsa, served with pinto beans and spanish rice. $9.95

From the Grill:

Served with a homemade bread and two of the following sides: garlic mashed potatoes, baked potato, wild rice, sautéed mixed vegetables or italian green beans.

Herb Roasted Chicken – Half a chicken slow-roasted with a special herb sauce. A perfect item to share. $11.95

Pineapple Salmon – A grilled filet of coho salmon served with pineapple salsa. $11.95

Pork Chop – 8 oz. center-cut pork chop grilled with a spicy tequila cranberry apple chutney. $12.95

Rib Eye Steak – A hand-cut 8 oz. angus beef rib steak with a side of horseradish cream sauce. $18.95, 12 oz. for $23.95

Filet Mignon – A hand-cut 5 oz. angus beef filet with honey balsamic béarnaise sauce. $16.95, two 5 oz. filets for $24.95

New Mexican:

All New Mexican plates are served with spanish rice and pinto beans.

Enchilada Plate – Flat enchiladas stuffed with cheese and smothered in your choice of chile. $7.95, add seasoned ground beef or chicken for $2.00

Relleno Plate – Two Hatch green chiles stuffed with cheddar cheese, dipped in a cornbread batter, fried, and smothered in your choice of chile. $9.95

Taco Plate – Two freshly fried shredded beef, chicken, or vegetarian tacos topped with cheese, lettuce and our house salsa. $8.95, additional tacos for $2.00 each

Burrito Plate – A large flour tortilla stuffed with pinto beans and smothered in cheese and your choice of chile. $7.95, add seasoned ground beef or chicken for $2.00

Santa Fe Steak – Chicken-fried steak smothered with melted cheese and your choice of chile. $9.95

Eklund Combo Plate – A beef taco, chicken enchilada, and green chile relleno with your choice of chile sauce. $10.95

Vegetarian Combo Plate – A potato, onion, and guacamole taco, cheese enchilada, and green chile relleno with our vegetarian red chile sauce. $9.95

Hot Sandwiches:

Club Sandwich – A double-decker sandwich with turkey, ham, and bacon with american cheese on whole wheat bread. Served with lettuce, tomato, a pickle, and french fries or fresh fruit. $8.95 or make it a half club sandwich with a cup of soup or a house salad for the same price.

Hot Open-Faced Meatloaf Sandwich – Made from scratch, smothered in our beef gravy, and served on texas toast with garlic mashed potatoes. $8.95

Hot Open-Faced Turkey Sandwich – Smothered in our turkey gravy on texas toast with garlic mashed potatoes. $7.95

Reuben Sandwich – Corned beef, sauerkraut, and swiss cheese served on toasted rye bread with thousand island dressing, a pickle and your choice of french fries or garlic mashed potatoes. $8.95

Eklund Favorites:

The Eklund Burger – A ½ pound beef patty served open-face on texas toast smothered in your choice of chile sauce and topped with cheddar cheese. Served with french fries. $8.95

Build Your Own Burger – A ½ pound beef patty served on a sesame bun with lettuce, tomato, onion, and pickle and your choice of three of the following toppings, mushrooms, grilled onions, chopped green chile, american cheese, cheddar, provolone or swiss cheese. Served with french fries. $8.50, add a second patty for $4.00

Chicken-Fried Steak – Back by popular demand! Steak fritter with white gravy with garlic mashed potatoes. $9.95

Small Appetites:

Bitty Burger – A ¼ pound hamburger with lettuce, tomato and onion served with fries or fresh fruit. $5.50, additional toppings $0.50 each.

Grilled Cheese Sandwich – American cheese melted on white bread served with french fries or fresh fruit. $3.95

Fish and Chips – Two battered fish filets over a basket of fries with tartar sauce. $5.95, additional filets $2.00 each

Chicken Strip Basket – Homemade chicken strips with ranch dressing and french fries. $4.95

Tiny New Mexican Plate – A quesadilla or single taco, served with pinto beans and Spanish rice. $4.95
