Our full menu is available during lunch and dinner in both of our dining rooms.

We serve an enhanced continental breakfast for hotel guests from 6:30 to 8:30 am daily.

Daily Lunch and Sunday Brunch: 11:00 am to 1:30 PM

Sunday Brunch features Prime Rib, Eggs Benedict, and Custom Made Omelets in addition to our regular menu.

Dinner is served from 4:30 PM to 8:00 PM Daily

On occasion, we do stop serving a little earlier, so please call ahead if you are planning a late meal.


Ek Rolls – Our unique invention - Hatch green chile and cheese, stuffed in egg roll wrappers and fried to a golden brown, served with ranch dressing.

Smothered Chile Cheese Fries – Ample cheddar cheese and your choice of chile sauce.

Stuffed Potato Skins – Four baked potato skins stuffed with bacon, chopped green chile and cheddar cheese, served with a side of ranch dressing.

Nachos – Fresh corn chips smothered in your choice of chile sauce, pinto beans and melted cheddar cheese and served with sour cream and guacamole. Adds: seasoned ground beef or chicken.

Guacamole – Fresh guacamole makes the perfect accompaniment for our tortilla chips.

Lighter Fare:

Soup of the Day – Your choice of our chef’s daily soups by the cup or bowl.

House Salad – Mixed greens with red cabbage, carrots, tomato, and cucumber served with your choice of ranch, thousand island, blue cheese, caesar, house italian or homemade honey balsamic vinaigrette dressing. Make it a meal, add grilled salmon, steak or chicken.

Chef Salad – Mixed greens with ham, turkey, bacon, cheddar cheese and hard-boiled egg wedges.

Mediterranean Lasagna – Vegetarian spinach lasagna with feta cheese, baked in a light tomato salsa and served with sautéed mixed vegetables.

From the Grill:

Served with a homemade bread and two of the following sides: garlic mashed potatoes, baked potato, wild rice, sautéed mixed vegetables or italian green beans.

Grilled Chicken Breast – Grilled 8 oz portion served with raspberry chipotle sauce and 2 sides.

Pineapple Salmon – A grilled filet of coho salmon served with pineapple salsa.

Pork Chop – 8 oz. center-cut pork chop grilled with a spicy tequila cranberry apple chutney.

Rib Eye Steak – A hand-cut 12 oz. beef rib steak with a side of horseradish cream sauce. 

Filet Mignon – A hand-cut 8 oz. beef filet with two sides.

New Mexican:

All New Mexican plates are served with spanish rice and pinto beans.

Enchilada Plate – Flat enchiladas stuffed with cheese and smothered in your choice of chile. Adds: seasoned ground beef or chicken.

Relleno Plate – Two Hatch green chiles stuffed with cheddar cheese, dipped in a cornbread batter, fried, and smothered in your choice of chile.

Taco Plate – Two freshly fried shredded beef, chicken, or vegetarian tacos topped with cheese, lettuce and our house salsa.

Burrito – A large flour tortilla stuffed with pinto beans and smothered in cheese and your choice of chile. Adds: seasoned ground beef or chicken.

Santa Fe Steak or Chicken – Chicken-fried steak or chicken breast,smothered with melted cheese and your choice of chile.

Eklund Combo Plate – A beef taco, chicken enchilada, and green chile relleno with your choice of chile sauce.

Vegetarian Combo Plate – A potato, onion, and guacamole taco, cheese enchilada, and green chile relleno with our vegetarian red chile sauce.

Hot Sandwiches:

Club Sandwich – A robust sandwich with turkey, ham, and bacon with american cheese on whole wheat bread. Served with lettuce, tomato, a pickle, and french fries or fresh fruit. Make it a half club sandwich with a cup of soup or a house salad for the same price as a full sanwich.

Hot Open-Faced Meatloaf Sandwich – Made from scratch, smothered in our beef gravy, and served on texas toast with garlic mashed potatoes.

Reuben Sandwich – Corned beef, sauerkraut, and swiss cheese served on toasted rye bread with thousand island dressing, a pickle and your choice of french fries or garlic mashed potatoes.

Eklund Favorites:

The Eklund Burger – A ½ pound beef patty served open-face on texas toast smothered in your choice of chile sauce and topped with cheddar cheese. Served with french fries.

Build Your Own Burger – A ½ pound beef patty served on a sesame bun with lettuce, tomato, onion, and pickle and your choice of three of the following toppings, mushrooms, grilled onions, chopped green chile, american cheese, cheddar, provolone or swiss cheese. Served with french fries. 

Chicken-Fried Steak or Chicken-Fried Chicken Breast – Back by popular demand! Served with two sides.

Small Appetites:

Bitty Burger – A ¼ pound hamburger with lettuce, tomato and onion served with fries or fresh fruit. 

Grilled Cheese Sandwich – American cheese melted on white bread served with french fries or fresh fruit.

Fish and Chips – Two battered fish filets over a basket of fries with tartar sauce. 

Chicken Strip Basket – Homemade chicken strips with ranch dressing and french fries. 

Tiny New Mexican Plate – A quesadilla or single taco, served with pinto beans and Spanish rice. 

Any of our entrees can be served with a cup of soup or a house salad.
